Spaghetti with sauteed Cherry Tomatoes & Saffron

Ingredients

  • 500g spaghetti (freshly made or bought)
  • 2 cartons of cherry tomatoes
  • 3 cloves of garlic
  • Few threads of Saffron (or crushed chili flakes)
  • Few leaves of fresh basil

Preparation

  • Boil water for the pasta and salt well
  • Cut tomatoes in half
  • Put saffron threads in a little warm water
  • Smash garlic & finely chop basil
  • Heat olive oil in pan and drop tomatoes& garlic saute at high heat for a few minutes (add a pinch of sugar) and turn heat down place lid on pan
  • Cook for a few minutes season with salt & pepper and add saffron
  • Strain pasta and add to tomatoes

Presentation

  • Decorate with basil leaves and drizzle with olive oil
  • Serve with parmesano Reggiano cheese
