Spaetzle

Spaetzle are a typical German style pasta which is either served as a side dish for meat entrees or as a main course.

Ingredients for Spaetzle

  • 400g Flour (optional 25% of flour mixture can be semolina)
  • 4 Eggs
  • 250ml lukewarm water & milk (optional 25% of four mixture can be milk)
  • 1 Tea spoon salt
  • Pinch of nutmeg (optional)

Preparation

  • Mix all ingredients until you get a sticky dough let it rest for ca. 10 minutes
  • Bring water to a boil and season with a handful of coarse salt
  • The traditional way of making them is by cutting the dough on a wooden board and letting it fall into the boiling water (see image below) alternatively you may use a large holed sieve or metal grater and press the dough through it.
  • Drop a few Spaetzle at a time and let them cook for 2 – 3 minutes then remove them with a skimmer, place them in a bowl (optional with a little butter)
  • Once you have cooked all the Spaetzle you may proceed to “dress” them

Serving Suggestions & Sauces

There are many ways in which you can enjoy Spaetzle here are some ideas:

  • Fry Onions in butter and mix with cheese & parsley (as seen in picture)
  • Melt butter in a pan mix in the Spaetzle and add cheese (i.e. Gruyère or Emmentaler)
  • Melt butter in a pan sauteé leeks add Spaetzle and cheese
  • Sauteé pancetta & onions add the Spaetzle, cheese and garnish with parsley
  • You may also make a Spaetzle gratin by placing the Spaetzle in an oven dish with pancetta and cheese, or any other combination of ingredients
  • Melt butter in a pan sauteé mushrooms add the Spaetzle and cheese
