Seared Tuna on Avocado Salad & Rice


  • 2 Tuna Steaks (sushi grade)
  • 2 Ripe Avocados
  • 1/2 – 1 cup of sesame seeds
  • 1 1/2 Cups of rice (Japanese or other short grain rice)
  • 2 Tablespoons chopped dill (plus extra for garnish)
  • 1 Tablespoon of rice vinegar or other white vinegar
  • 3/4 Tablespoon of sugar
  • 1/2 Teaspoon of salt
  • Salt & Pepper

Preparation Avocado Salad

  • Cut the avocado into small cubes and add juice of half a lemon to prevent oxidation
  • Add chopped dill, 1 tablespoon of sesame seeds,  Salt and Pepper

Preparation “Sushi Style Rice”

  • Cook rice (ration 2 to 1)
  • Once the rice is done take it off the heat and place a kitchen towel between the bowl and the lid and let it rest for ca 10 minutes
  • Prepare “sushi marinade” by mixing rice vinegar, sugar & salt in a separate bowl
  • Pour the marinate over the rice and mix well

Preparation Tuna

  • Prepare a crust of sesame seeds and salt and make sure to cover all sides of the tuna
  • Preheat a pan to high heat, adding some oil shortly before searing the tuna
  • Seat tuna until medium rare ca. 3 minutes on each side


  • Use a food ring or homemade ring made of aluminum foil and place first the rice, then the avocado followed by the tuna (see picture)
  • Garnish with dill


*Yields 2 Main Courses / Can be served as appetizer yields 4
