Red Beet Salad

Red beets are a very healthy vegetable containing tons of vitamin A & C, Betaine, folic acid, sodium, magnesium, calcium, iron and phosperous. Medical studies have shown that beets in your diet help protect your body against heart disease. Basically they are a great food. This is a very quick and easy salad/carpaccio to make, which looks and tastes great!


  • 3 – 4 Red beets
  • 1 Garlic clove (remove center)
  • 2 Table spoons of chopped parsley
  • 3 Table spoons of good Extra Virgin Olive Oil
  • 1 Table spoon good vinegar (sherry, white wine, raspberry, etc)
  • Salt & Pepper to taste


  • Boil the red beets (I peel the skin, some say better to leave skin on, so it is your decision) until tender (check by piercing with a knife) which can take up to an hour
  • In a bowl mix the rest of the ingredients to make the vinaigrette and set aside
  • Once the red beets are done let the cool and thinly slice them with a┬ámandoline or knife
  • Arrange them fanned out on a plate and drizzle with vinaigrette
