Meatballs with Cucumbers

A meatball is foodstuff made from an amount of ground meat rolled into a small ball, sometimes along with other ingredients, such as breadcrumbs, minced onion, spices, and possibly eggs. Meatballs are usually prepared and rolled by hand, and are cooked by frying, baking, steaming, or braising in sauce.

Ingredients Meatballs

  • 500g minced meat (half beef & half pork)
  • 1 table spoon mustard
  • 1 egg
  • 2 table spoons of bread crumbs
  • 1/2 chopped onion
  • 2 cloves of garlic
  • Chopped dill
  • Salt & pepper
  • Mix ingredients and form small meatballs
  • Preheat oven to 220ª  and roast meatballs for 10 minutes

Ingredients Sauce

  • 2 – 3 large cucumbers
  • 1 1/2 onions
  • 2 cloves of garlic
  • 1 bunch of dill
  • 1 cup of Crème fraîche, mascarpone, or similar
  • Noilly Prat, white wine, or water
  • Salt & pepper

Preparation

  • Chop onion & garlic
  • Peal cucumber cut in half, remove seeds and cut in 1/2 cm pieces
  • Heat olive oil in pan and sauté onions & garlic
  • Add cucumbers and sauté for a few minutes, deglaze with vermouth or wine simmer for a few minutes
  • Add Crème fraîche & meatballs and continue to simmer for ca. 5 minutes
  • Finish with chopped dill, season with salt & pepper

Presentation

  • Decorate with freshly chopped dill leaves
