Homemade Ravioli with Radicchio & Walnuts

Ingredients Ravioli Filling

  • Pasta dough (2 cups)
  • 2 radicchios (keep outer leaves for presentation)
  • 50g of chopped walnuts
  • 1 Table spoon balsamic Vinegar
  • 1 egg yolk
  • 180g ricotta or mascarpone cheese
  • 80 – 100g Parmesano Reggiano
  • (100g Taleggio cheese optional)
  • Salt & Pepper

Preparation

  • Roast walnuts on pan
  • Finely chop radicchio and saute in butter
  • Add Balsamic vinegar and cook until soft (15 min)
  • Add finely chopped Taleggio and walnuts
  • Season with salt & pepper and cool down
  • Once cooled mix with cheeses & season to taste
  • (keep some mixture for the sauce)
  • Add egg yolk at the end

Cooking the Ravioli

  • Cook ravioli in salted boiling water until ready (ca 5 – 7 min)
  • In separate pot melt butterĀ  and add remaining radicchio mixture

Presentation

  • Arrange as seen in picture (or similar)
  • Top with toasted walnuts, Parmesan & extra ricotta (as needed)
