Focaccia with Caramelized Onions

Focaccia is a flat oven-baked Italian bread, which may be topped with herbs or other ingredients. It is related to pizza, but not considered to be the same.

Focaccia is popular in Italy and is usually seasoned with olive oil and salt, and sometimes herbs, and may be topped with onion, cheese and meat, or flavored with a number of vegetables. It is eaten as a snack in Italy and school children will often purchase a slice from a baker’s on the way to school, to enjoy at break time

Ingredients Dough

  • 175 ml  of warm Water
  • 250 g all purpose flour
  • 2 Table Spoons of Olive Oil
  • 1 pinch of salt
  • 1-2 packages of dry yeast
  • Parmesano Reggiano

Ingredients Caramelized Onions

  • 1 large red onion
  • 2-3 cloves of Garlic
  • Olive oil & butter
  • Salt & pepper

Preparation Caramelized Onions

  • Finely slice the onion & garlic
  • Place in pan with oil & butter
  • Saute with medium heat (caution not to burn onions)

Preparation Dough

  • Mix flour, salt & dry yeast
  • Add olive oil and slowly add warm water
  • Knead dough until smooth
  • Place in a bowl sprinkle with some oil, cover with plastic wrap & let it rise for  ca 30-45 min
  • Roll out dough and place on oiled  oven sheet make holes into the dough
  • Spread onions over dough & sprinkle with Parmesan Cheese
  • Preheat oven to  190ª C bake 20 – 25 min, or until brown
  • Serve warm


Use Rosemary or thyme  instead of onions
you may also use this dough for “thicker” pizzas
