German style "Hefezopf"

Hefekranz or Hefezopf are breads from southern Germany and Austria. The dough is made from sugar, flour, butter, eggs and yeast (sometimes with raisins or almonds). Typically both Hefezopf and Hefekranz consist of three braided dough-pieces. While the Hefezopf (“Zopf” meaning braid) is a loaf of only consisting of a braid, the Hefekranz’ braid is bent into a wreath (“Kranz” meaning wreath).

Ingredients Dough

  • 250g all purpose flour
  • 50g sugar
  • 110g butter
  • 1 egg
  • Pinch of salt
  • 2 packages of instant dry yeast
  • 1 package of vanilla sugar
  • 100ml of warm milk
  • Handful of raisins (optional)
  • A shot of Rum (optional)

Preparation

  • Mix all dry ingredients & add butter & milk slowly
  • Add 1/2 egg to mixture
  • Add raisins
  • Knead dough until smooth
  • Place in a bowl cover with plastic wrap & let it rise for
  • ca 30-45 min
  • Divide dough into 3 equal pieces and roll into long bands and braid dough
  • Brush with remaining egg
  • Preheat oven to  180ª C bake  30 min, or until brown
