Fried Potatoes with Mushrooms Medley

This is a perfect side dish, that you may expand and turn into a full meal as well.


  • 500g Potatoes
  • 500g Mushrooms mixed (porcini, oyster mushrooms, button mushrooms, shiitake, chanterelles, etc)
  • 1 Onion
  • Olive Oil & butter (for sauté)
  • Salt & Pepper to taste
  • 1/4 Cup of chopped parsley


  • Peel the potatoes and cut them in half or quarters depending on how large they are, then slice them in ca. 1/2 cm pieces
  • Roughly chop the onion
  • Heat a mixture of olive oil and butter and place Potatoes and  onions in a sauté pan cover and sauté them until tender (ca. 30-40 minutes) make sure they brown but not burn buy steering them occasionally
  • In a separate pan heat olive oil and butter and fry the mushrooms (I do this in a separate pan to brown them, it is more time consuming, so if you do not have time just place them with the potatoes, otherwise fry the mushroom in batches flipping them to obtain an even gold/brown coloring)
  • Season with salt & pepper and sprinkle with chopped parsley

Additional Serving Suggestions

  • Serve as a side dish with meat or poultry, it also makes an excellent BBQ side
  • Serve with eggs and salad for a light dinner
  • You may also fry the potatoes with bacon or pancetta to give them more flavor, or add chopped sausage and turn this into a main dish
  • You can also add more veggies like peppers, zucchini, carrots,etc
  • In theory this is a great starting dish which you can turn into many different dishes 😉
