Chili con Carne

Chili con Carne (often known simply as chili) is a spicy stew. The name of the dish derives from the Spanish chile con carne, “chili pepper with meat”. Traditional versions are made, minimally, from chili peppers, garlic, onions, and cumin, along with chopped or ground beef. Beans and tomatoes are frequently included. Variations, both geographic and personal, may involve different types of meat as well as a variety of other ingredients. It can be found worldwide in local variations and also in certain American-style fast food restaurants. The variant recipes provoke disputes among aficionados, and the dish is used as an ingredient in a number of other foods.

Ingredients Chilli

  • 500g minced meat (half beef & half pork)
  • 1 chopped onion
  • 2 diced Poblano peppers (or regular green peppers)
  • 1 Jalapeño pepper
  • 3 cloves of garlic
  • 1 bottle of dark beer
  • Ca 500ml chicken stock
  • 1 can of diced tomatoes
  • 3 cans of beans (can use diff. varieties: back, pinto, kidney)
  • Chili powder, cumin, spicy smoked paprika, salt & pepper (you may also use premixed chili/taco seasoning)
  • Sauté the onions, garlic and peppers until soft, add the minced meat and cook until brown.
  • Add the spices and mix well
  • Deglacé with the beer and cook it down for a while add the Tomatoes & chicken stock and cook for ca an hour
  • Add the drained beans at the end

For the “Pico di Gallo”

  • 2 ripe avocados
  • 1 Tomato
  • 2 scallions chopped
  • A few chopped leaves of cilantro (may use parsley)
  • Juice of 1 lime
  • Salt & pepper
  • Cut the avocado & tomato in rough cubes and add lime juice to prevent from browning
  • Mix with scallions, cilantro and season with salt & pepper

Grated Cheese & pickled  Jalapeño pepper

  • Use some grated cheese to place over hot chili (cheddar, mozzarella, any cheese that you find)
  • If you like you may add some pickled  Jalapeño peppers

Ingredients Sour Cream

  • 250g of sour cream or yogurt (I use Total)
  • Chopped scallions & cilantro
  • Some roasted cilantro seeds if you can find them (they give a very distinct and unique flavor)
  • Salt & pepper (to taste)

Preparation

  • Place the chili in a bowl
  • Sprinkle with cheese (and pickled  Jalapeño peppers)
  • Add a spoon of “Pico di Gallo”
  • Finish with some Cream
  • decorate with cilantro leaves
  • And serve with Tortilla chips
